Caramelised Fruit with Greek Yoghurt

Prep and Cook Time 40 minutes
• 300g 0%-fat Greek yoghurt
• 15g coconut oil or butter
• 60g oats
• 1 pear
• 1 apple
• 1 tbsp demerara sugar
• 1 tsp cinnamon
Although this recipe takes time to prepare it’s a fantastic post-workout recovery snack. You can make a larger batch of the fruit and store it in an airtight container in the fridge to save time later in the week.
The combination of Greek yoghurt and fruit provides a great balance of carbohydrate for replenishing energy and protein for muscle growth and repair…. It helps that it’s incredibly tasty too!
1 – Heat oven to 180C.
2 – Half the apples and pears.
3 – Heat a pan to a medium heat and add a small knob of butter or coconut oil.
4 – When the oil has melted sprinkle over the sugar and allow to caramelise.
5 – Add the fruit face down for 1-2 minutes, moving gently with a spoon.
6 – Remove the pan from the heat and place the fruit face up in a baking tray.
7 – Cook for 30-35 minutes until tender.
8 – Plate up and serve with the Greek yoghurt, sprinkling over the cinnamon and oats to taste.
